About the name:
In the mountains, on a ranch or other parts of the western United States, many locals cherish chiltepines. Sometimes people pick them green and cure them using salt. After harvest, the red peppers are usually dried. Then they can be stored, fermented, pounded to salsa, mixed into drinks, or ground, creating chile flakes brighter, headier, and more ancient than anything you can get from the store.
The Sonoran desert is just one place the mercurial pepper grows. The pepper was known to the Mayans and O’Odham, used for food and medicine. Though chile peppers are indigenous to the New World, the chiltepin is the only wild chile native to the United States.
